Before I get into the sconage for this post...I wanted to say a big, floury thanks to Gigi from Gigi Cakes. That sweet lady gifted me with the Arte y Pico award yesterday, saying my crazy cupcakery was inspiring. Thanks Gigi...! I will post my chosen 5 inspiring bloggers tomorrow.
So now onto the TWD post! Karina of The Floured Apron chose Apple Cheddar Scones for our fabulous pick this week.
I didn't really look at the recipe until yesterday ... but I couldn't really fathom how apple and cheddar really worked in a scone. Sure I love me some fiji and stinky gorgonzola, but in a scone? Scones are for pumpkin and cinnamon and not cheese, right? Hmm intriguing.
I went to Trader Joes seeking the dried apple that others said they found, but the one apple item I found didn't say dried...and my eye caught dried apricots. Now apricots and cheddar somehow sounded better.
Randomly found some apricot nectar to use in place of the apple juice, and used white wheat flour instead of AP...because in something like this I love to try to make it a bit more fiberific...esp if I might have it for breakfast. Other than this I followed the recipe...oh I forgot the cornmeal entirely which hopefully didn't make much of a diff, not quite sure.
Used this fab pig head ice cream scooper my Mom got me for the scone scooping, after reading the P&Q from the ladies I realized I was not going to be hand-kneading anything, they scooped out fabulously onto the parchment with no hassle.
I ate one of the small scones a few minutes out of the oven...I wasn't quite sure that I loved it...but towards the end of the scone I thought...this is tasty! I'll see what they are like tomorrow morning.
If I make them again, I might do a bit more apricot as the flavor was not strong enough for me, but other than that I'd leave well-enough alone! Oh ... and next time I would NOT scrape my index finger knuckle along the grater, taking some skin with it. Oops and OUCH!

Sorry about your finger, but it looks like it was worth it as your scones look lovely. I think the apricots sound great and definitely will give those a try...thanks for sharing the idea.

Your scones look wonderful! I didnt much agree that apples and cheddar went together well either which is why I went another route, but I've heard such good things that I may have to try them sometime.
